what you get is slow play until one player hits AK suited and another has pocket queens.
three hours is also a bit long for this type of tourney.
I would suggest a start of 1500-2500 chips.
since it is friendly a start of 5 / 10 blinds is OKay.
And a raise in blinds every ten minutes. (15 minutes is OK since it is friendly)
I also would drop the 20/40 level
There is a huge gap between the blinds
5 / big gap / 10 / 15 / 20 / 25 / big gap / 50
I would go
15 (warmup) / 20 / 30 / 40 /50 / 60 /small jump/ 75 /small jump/ 100 (can add an ante here 1/4 of small blind) so 25) / 125 / 150 / small jump 200 / 250 /300 /400/ 500 / 600.
