Which games require players to form words incorporating already played letters? Are there other games where you play off of previously played letters, but that DON'T involve cross-word style play?

When I started trying to categorize word Games, Steffan dropped me a note. Check out this AWESOME database of Word Games!
"Originally Compiled by Steffan O'Sullivan and now maintained by Graham Toal.
"This is an attempt to list the letter-by-letter word games that have been published -- called 'letter-by-letter games', or 'word-building games', to distinguish them from word games which use whole words, phrases, sentences, etc. Examples of the latter include Taboo, Guestures, Trivial Pursuit, and Charades; all of which can be considered 'word games', but are outside the scope of this list. Instead, this list focuses on games in which the basic element is a letter, and words are built up from there."

Word Association Mechanics by David Meredith
David Meredith has given some thought to the mechanics behind word-based word games. This is more detailed than my own "Word Based Word Games" list (#6), which I created before I knew his existed. Here is David's description of his list...
"This is merely a list of methods used to 'pass' a word to your partner in Word Association games with an example of each mechanic.
Word association games are party games. Though trivia games could be considered word association, I stick to the games that require a player to give clues in some manner in order to induce a partner to guess a given word."
