The absence of crumbling walls is definitely puzzling (those would've been so cool!). Could Spielbox have copyrighted the crumbling walls representation?

AFAIK, it had somthing to do with copyrights, yes.
I guess that's also true for the praying Cathar symbol.

I have a variant for using Cathar and Siege tiles together over at www.carcassonnecentral.com (available from the forum) for those of us lucky enough to own both Cathars and Siege tiles.
