Can a missed or a bang card be played to dodge a Gatling Gun?
Also, can missed be played to dodge things other than bang! Cards, like a cat bailou for instance?

Missed can be played to avoid being hit by the bang symbol (which includes the gatling gun). It would not affect cards that do not have the bang symbol (like cat bailou).

The rules say that the Gatling gun is not a bang though. Why would the rule specify that it doesn't count as a bang unless they didn't want it to be missable like a bang?

I believe what the rules are stating are that the Gatling gun isn't a bang for the use of the only one Bang card can be played per turn. The Gatling Gun still has the bang symbol which makes it missable. I'm going off memory here for what's on the card and I'll go dig that out in a second.

Edit:
The wording from the rules:
"The Gatling shoots "a BANG!" to "all the other players", regardless of the distance. Even though the Gatling shoots a BANG! to all the other players, it is not considered a BANG! card. During your turn you can play any number of Gatling, but only one BANG! card.

So Miss and beer still are usable for the bang that the Gatling produces, but you can shoot the other players multiple times with it since it doesn't count as a BANG! card itself.

Edit2: Just to be a bit clearer, the rules differentiate the BANG! card and the BANG! action. Both the BANG! card and Gatling produce BANG! actions. Beer and Missed counter the action not the actual card.

Here are some hints that includes expansions:
1. There is a Bang! card and Bang! action/icon. A bit confusing
2. Any Bang! action may be countered with any Missed! action.
3. Only Bang! card has a limit one per turn.
4. On the other hand only Bang! card may be used for Indians and Duel.

The rules only state that you can play a single BANG! card per turn. You can play as many cards as you like during your turn.

Perhaps this is a difference in versions. My rules say it on page 3 of I'm not reading bat wrong. What version do you have?

Ah! So that would not apply to things like beer or Gatling because once they are done they are out of play and another could be used. Interesting. I need to re-read somr rules now. Thanks!

Strictly they are never "in play".
They are in hand and then are played and immediately discarded.
