Might be about to start my first session on Saturday, I might have one player for the starting session but never again. Would that mess with the game?

Not necessarily. You can always have someone else take that apot in the future. And if you can't find anyone to fill in and cover that family, you can place their heirlooms randomly after completing the story so that the casual play is fairly even.

There are mechanisms in place for adding and removing players during the campaign. You want to play with a minimum of three people for best results, but it's no big deal to have someone join in for this session, then drop out for two, then join back in again later. Any family that has been played for only half the total games or fewer gets a random heirloomed item at the start of the session to catch them up to the others.
